#StayHome | Easter Feast

There’s no doubt that the first #StayHome holiday is going to feel a little strange. Holidays are what we look forward to throughout the year—as we connect, eat, drink and relax with our family and friends. This year, that looks a little different as Easter arrives, but we promise you, whether you’re alone, with a partner, or with your family, you can still cook and enjoy an Easter Feast—just share it online instead—here are a few ways to pull it together.

Dinner for one

While it may seem like a lot for one person, the beauty of this meal is that the ham and mashed potatoes freeze well.

Cook once, eat twice–reinvent leftovers and enjoy throughout Easter weekend

Freeze the ham—simply slice or dice it and wrap it in aluminum foil and then put it in a baggie so you can squeeze the air out before storing it in the freezer. Then, use it for wraps, sandwiches, omelets, and soups, for quick weeknight meals

Freeze the potatoes—scoop out one-cup portions and place on your Bake & Roll mat or parchment paper. Stick them in the freezer until they become solid (a few hours) and then transfer to a container or freezer bag for storing. They last for 3-4 months and make a quick side, can be used to thicken soups, defrost and combine with canned tuna/salmon for an easy pan fried fish cake

Dinner for two

Easter #DateNight! Cook together and whip up this delicious meal. Or, video chat with your family and friends while you cook and eat together—it’s the new normal! Since you’ve got extra time, you can always prep the day before with these tips:

□ Coat ham with prepared glaze. Refrigerate in steamer overnight

□ Peel potatoes (if you wish) and chop into small pieces. Place in another Multipurpose Steamer or bowl; cover with cold water. Refrigerate overnight

□ If using fresh greens beans (for Green Bean Casserole) wash and trim ends

Family Feast

□ Make boozy cherries! Instead of re-hydrating your cherries with pineapple juice, try brandy, bourbon, or orange liqueur

□ Skip peeling your ginger—simply scrub your ginger clean and grate!
