Celebrate your way— it’s National Pumpkin Day!

Today is National Pumpkin Day! Pumpkin is featured in SO many of our favourite autumn recipes. And, to celebrate this foodie holiday, we are sharing some of our go-to pumpkin recipes.

It’s the perfect day to pay homage to the pumpkin while enjoying our fabulous pumpkin desserts and baked goods.

Pumpkin Pie

Prep time: 1 hour + 10 min (includes 1 hour chill time) 

Serves: 8

Ingredients

1 pkg Pumpkin Pie Mix

1 can (14 oz/398 ml) light coconut milk

1 can (14 oz/398 ml) pumpkin purée

9" prepared graham pie shell or prebaked pie crust

Toppings (optional): whipped cream or Greek yogurt

Preparation

1.     In a Multipurpose Pot—8 cup, whisk mix with coconut milk. Bring to a rolling boil over medium-high heat, whisking frequently. 

2.     Remove from heat; whisk in pumpkin purée until evenly mixed. 

3.     Pour into pie shell. Refrigerate until set, at least 1 hour. If making ahead, cover and refrigerate overnight. 

4.     To serve, cut into wedges and top with whipped cream or yogurt, if desired.

Tips

If using a frozen pie shell, follow directions on the package for baking crust before adding pumpkin filling.

Pumpkin Spice Loaf & Muffins

The Pumpkin Spice Loaf & Muffin Mix is gluten, and nut-free comes in a pack of 2 and is perfect for making loaves and muffins.

Prep time: 20 min

Serves: 1 loaf for 12 servings

Ingredients

2 eggs

1 cup pumpkin purée

1⁄2 cup vegetable oil

1 pkg Pumpkin Spice Loaf & Muffin Mix (Pack of 2)

1 recipe prepared Spiced Cream Cheese Icing, (optional)

Preparation

  1. Generously oil Rectangular Steamer using basting brush.

  2. In large bowl, whisk eggs. Whisk in pumpkin purée and oil. Whisk in mix.

  3. Scrape batter into steamer. Microwave for 8 min on high, uncovered. Rest in steamer for 6 min; invert onto wire rack to cool. Or bake in preheated 350° F oven, 50–55 min. Cool in steamer 15 min; unmold.

  4. When completely cool, spread on icing, if desired. Slice and serve.

Tips

Divide and spoon batter into oiled Muffin Maker. Bake in preheated 375° F oven for 15–18 min. Cool in pan 10 min; unmold. Makes 12 muffins. 

Pumpkin Spice Latte Cookies

The perfect cookie for when the pumpkin craving hits.

Prep time: 25 min

Serves: 30 cookies

Ingredients

1 cup canned pumpkin

1⁄3 cup sugar

1⁄2 cup oil

1 egg

1 tbsp instant coffee

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

2 tsp baking powder

1 tsp Pumpkin Pie Spice

Preparation

1.     Preheat oven to 350° F.

2.     Combine the first six ingredients in a medium prep bowl and stir until thoroughly incorporated.

3.     Combine dry ingredients in another medium prep bowl. Fold into pumpkin mixture.

4.     Drop by the spoonful onto a Sheet Pan lined with a lightly oiled Sheet Pan Liner. Bake for 12–15 min.

Tips

Make a delicious latte icing by mixing 1⁄2 tsp Pumpkin Pie Spice and 2 tbsp icing sugar with 1⁄2 cup spreadable cream cheese.

Pumpkin Pie Cheesecake

A delectable delight! You gotta try this one.

Ingredients

1 pkg Pumpkin Pie Mix

398 ml pumpkin puree

2½ cups graham crumbs

½ cup butter

3 pkg (250 g each) cream cheese

¾ cup sugar

3 eggs

1 pkg Chocolate Fudge Sauce Mix

1 pkg Caramel Sauce Mix

Whipped cream (as desired)

Preparation

1.     Mix Pumpkin Pie Mix with 398 ml pumpkin puree, set aside.

2.     Mix 2½ cups graham crumbs and ½ cup butter. Press into bottom of pan.

3.     Mix 3 pkg (250 g each) cream cheese and ¾ cup sugar until blended.

4.     Add pumpkin pie puree mix, then add 3 eggs (1 at a time).

5.     Pour over graham crust.

6.     Bake 35–45 mins or until centre is almost set.

7.     Made the Chocolate Fudge and Caramel Sauce as directed.

8.     Top with whipped cream, drizzle sauces all over; cut and enjoy.

Pumpkin Roll

A wonderful pumpkin twist on a classic Epicure recipe.

Ingredients

2 eggs

1 cup pumpkin purée

1⁄2 cup vegetable oil

1 pkg Pumpkin Spice Loaf & Muffin Mix (Pack of 2)

1 recipe prepared Spiced Cream Cheese Icing, (optional)

Walnuts

Whipped cream, if desired

Preparation

1.     Bake the Pumpkin Spice Loaf Mix on a Sheet Pan with Sheet Pan Liner.

2.     Layer with icing and walnuts.

3.     Roll it up.

4.     Chill for about 30 min and then remove.

5.     Ice the top and add more walnuts.

6.     Serve with whipped cream if desired.

DIY PSL

It wouldn’t be fall without a Pumpkin Spice Latte! So tap into your inner barista and try out this easy DIY recipe. 

Prep time: 12 min

Serves: 4 servings

Ingredients

Simple Syrup

1 cup water

3⁄4 cup sugar

2–3 tsp Pumpkin Pie Spice

1 tsp vanilla extract

 Latte

2 cups milk, your choice

1⁄4 cup canned pumpkin

2 cups strong brewed coffee

Preparation

1.     To make simple syrup, boil water, sugar, and Pumpkin Pie Spice in a Multipurpose Pot - 8 cup over high heat for 1 minute, whisking frequently.

2.     Remove from heat and stir in vanilla.

3.     In a large microwave-safe measuring cup, whisk milk with pumpkin. Microwave on high for 1 min, or until mixture starts to bubble.

4.     Using a milk frother or whisk, beat until frothy.

5.     Pour coffee into tumblers or cups. Stir 1–2 tsp syrup into each cup. (Refrigerate remaining syrup in a Cruet for another day.) Pour in frothed milk. Dust with more Pumpkin Pie Spice, if desired.
