Holidays At-Home | Hanukkah Latkes
Hang in there! It’s Hanukkah!
In a year of uncertainty and stress, Hanukkah can shine its bright light for all and remind us of a little magic and tradition. It's a celebration of joy - remembering the perseverance (Hanukkah means dedication) of the Maccabees fighting to save their culture and religion, and the miracle of the oil that lit the lamps for eight days while they worked to reclaim their temple. And whether or not you observe this holiday, it's a good reminder to create light in our hearts and homes. Let's celebrate then with Hanukkah's traditional food: crispy fried latkes!
CARROT & ZUCCHINI LATKES
Time: 30-45 min
Makes: 20 latkes
6 medium Yukon Gold potatoes
1 small green zucchini
1 small carrot
1 small onion
3 eggs
1⁄4 cup all-purpose flour or chickpea flour
2 tsp baking powder
1 tsp 3 Onion Dip Mix
1 tsp Sea Salt (Grinder)
Vegetable oil, for frying
1. Using the large holes of a grater, coarsely grate potatoes, zucchini and carrot; squeeze out as much liquid as possible from them. Pat excess moisture with a kitchen towel. Slice onion into thin strips.
2. In a large bowl, whisk eggs, then whisk in flour, baking powder, dip mix, and salt. Add grated potatoes, zucchini, carrot, and onion. Stir to mix.
3. Pour enough oil into a frying pan to come at least 1⁄2 inch up side of the pan. Heat over medium. When the oil is hot, pack the potato mixture into a 1⁄4 cup dry measure. Carefully turn into oil, then flatten slightly with a fork. Repeat with more latke mixture, but don't crowd the pan.
4. Fry until golden, about 3 minutes per side. Remove to Cooling Racks (Set of 2) and blot excess oil with a paper towel. Repeat with the remaining mixture and add more oil to the frying pan as needed. Serve with your favourite toppings and Epicure Dips.

PUT THE SQUEEZE ON!
For crispy latkes, after grating (potatoes, zucchini, carrot, beets) squeeze squeeze squeeze out any excess moisture. The best way is to wrap potatoes or veggies in a kitchen towel and twist both ends in opposite directions to extract liquid. Pat dry with a new towel before mixing.
